Pumpkin spice lattes, coffee and scones have become an annual holiday tradition. They can easily be made at home to save wait time and money.

Pumpkin is a holiday food that is craved by many. Every year, the anticipation grows as to when pumpkin spice coffee will appear on store shelves. The excitement gets more intense with the anticipation of Starbucks pumpkin spice latte and scones. All these items are great store bought, but they can be enjoyed year around, at home.

Pumpkin Spice Latte

This recipe is extremely easy, and would be great for holiday gatherings.

Ingredients:

  • 1 cup milk
  • 1/2 teaspoon vanilla extract
  • 2-3 tablespoons pumpkin pie mix
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • pinch of ginger (small pinch)
  • 1/4 to 1/2 cup brewed regular or decaf coffee
  • pumpkin pie spice for garnish
  • whipped cream and sweetener if desired

Directions:

  1. Brew 2 cups regular or decaf coffee in a coffee maker.
  2. Pour milk, pumpkin pie mix, and vanilla extract into a pot. Stir together well. Sprinkle cinnamon, nutmeg, and ginger into the liquid and stir.
  3. Heat on medium to medium high until a white foam has formed (almost boiling).
  4. Pour 1/2 a cup of milk into a coffee cup. Then pour 1/4 to 1/2 cup coffee in. Put whip cream with pumpkin spice on top, or just garnish with the pumpkin spice.

Instead of 1/2 cup of mix in the mug, the whole cup could go in along with 1/2 cup of coffee. If a sweeter taste is desired, put some sugar into the pumpkin and milk mix before heating, or sweeten with sweetener.

Pumpkin Spice Coffee

Pumpkin spice coffee is so simple to make, and placed with cream and sugar, great to drink on a cold holiday.

Ingredients:

  • 8 tablespoons regular or decaf coffee
  • 3 tablespoons pumpkin pie spice
  • 2 tablespoons brown sugar
  • 1 tablespoon cinnamon
  • 1/4 teaspoon nutmeg
  • 8 cups water

Directions:

  1. Mix coffee, pumpkin pie spice, brown sugar, cinnamon, and nutmeg in a small bowl. Mix well. Place into a coffee filter.
  2. Pour 8 cups water into the filter and brew.

Serve coffee with cream and sugar and some pumpkin pie, or some delicious pumpkin scones.

Pumpkin Scones

These scones can be served with a pumpkin glaze or cut in half with butter spread in the middle. Either way, they are easy to make and great for the holidays.

Ingredients:

  • 2 cups flour
  • 1/2 cup brown sugar
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2-3 tablespoons white sugar
  • 1 stick cold butter, cut into small pieces
  • 1 egg
  • 3 tablespoons milk
  • 3/4 cup pumpkin pie mix

Directions:

  1. Mix flour, brown sugar, cinnamon, nutmeg, baking powder, baking soda, salt, and 2 tablespoons white sugar together. Sift into a large bowl.
  2. Place small cut pieces of butter into the dry mix. Press into the mix using a fork, until no clumps of butter are evident.
  3. In a separate bowl, beat 1 egg. Pour in milk and pumpkin pie mix. Stir together and fold into dry ingredients until well blended.
  4. Using a serving spoon, spoon onto a baking sheet. Sprinkle the remaining white sugar on top of each scone, and bake 14-16 minutes.
  5. For the glaze, use 2 cups of confectioners sugar and 1 1/2 to 2 tablespoons of pumpkin pie mix. Mix till thick. Spoon over scones.

The glaze is optional. These scones would be wonderful with butter or by themselves.

The best thing about all these good pumpkin recipes is, they are available year around and can be made at home. Not only do they taste good, they also help save some money.
